French Toast Muffins via Pinterest

Back with some more cooking fun….or fail. Since I am in my apartment 6 out the 7 day week I wanted to find some cool stuff to make myself to eat. I mean, lets be real, Mac ‘n Cheese IS the cats meow but I can’t eat it every day. So after going through my “Food” board on Pinterest I found this recipe for French Toast Muffins (from Two Peas and Their Pod)!

Don’t they look good?! I love my some french toast and when it said to use french bread I thought PERFECT I had some left over from the French Bread Pizza I had made a couple days ago. It said that you could leave it in the refrigerator over night (but not more than over night, so….) so I made it on Sunday night and planned on having it before I mosied on to school Monday. Why you refrigerate it is beyond me but I just went with what the directions said! I cut the recipe in half because I didn’t have quite that much french bread but we good, I’ve halfed recipes before. I mixed my soul off and got it all ready in the pan to be refrigerated over night.

Please excuse the shotty darkness/weirdness of this pictures. My apartment’s lighting is slim to none. So at night time everything is really dark and I had to lighten these so you could see. And, now that I think about it, I’m not sure why my fridge doesn’t have a light. Imma need to look into that…. Anyway, I wrapped them up (which now I’m wondering if I was supposed to do that….) and went to bed! When I woke up in the morning I did the next steps, which was making the crumbly mix and then baking away!

I baked them for the allotted time but didn’t think they looked done. So I put them back in for a bit longer and when I first took them out they looked GREAT. They were big rounded topped like muffins should be and I was super pumped. I went to grab my phone – mind you, you can make it from one side of my apartment to the other in 3 steps – and when I got back this is what I found:

downsized_0805131000Hmmm….WHAT HAPPENED?!?! I picked one apart to see if it would at least taste good. Not really. Was a soggy mess! I don’t know if I left them in the fridge to long and the bread just soaked up to much. I stuck them in AGAIN and nothing happened. Well, by then I had to get ready for school so I settled for cereal instead. I put some tin foil on them, left them on the counter, and went to school. When I got home I looked at them again and they still looked a bit soggy. Popped them back in the oven for 30 more minutes (I did smaller segments to see if it was making a difference and then the end it was a total of 30 minutes) and nothing happened. No matter what I did the bread would not unsog! I left them out overnight, nothing covering them just letting the air get to them.

Still looking pretty awful! I picked one apart again to see what was going on and it was STILL SOGGY. When is this bread going to dry out?!?! The topping was tasty but everything else was kind of just an eggy mess. I don’t know if I didn’t use enough bread cubes. Too much batter. Sat to long in the fridge. I have no idea. This Pinterest cooking session was a total fail! I just can’t figure out how the other woman’s look SOO GOOOOD!
